Rate and extent of drying of African catfish Clarias gariepinus (Burchell 1822) treated by some drying methods

Abstract

The rate and extent of drying of Clarias gariepinus treated by wood smoke drying, charcoal smoke drying and solar drying method were studied. Fish Samples dried using wood, charcoal, and solar drying were compared for rate and extent of drying. Charcoal smoke-dried and wood smoke-dried fish had a higher rate of drying while solar-dried fish had the highest percentage extent of drying. It was observed that a negative relationship exists between the rate and extent of drying resulting from case hardening for drying methods that employ high heat intensity. Solar drying appears to be the best drying method regarding the extent of moisture loss.
