Influence of solar drying on quality of red and white onion powder

Abstract

The present investigation was carried out to study the influence of solar drying on the quality of red and white onions; and study of moisture content of onion powder, rehydration ratio of onion flakes, and sensory evaluation of onion powder. The onions take from local market of my village. We will mainly consider the red onions and white onions following methods are sun drying and mechanical drying. In sun drying maintain the temperature of nearly 27-35ºC and mechanical drying 60ºC, 80ºC and 100ºC. In sun drying we put that onion pieces 4-5 days and mechanical drying 5 hours’ time is required the dehydration of onion pieces they change into the onion flakes then test for rehydration process because in the format of onion powder result is not exactly so follow the onion flakes, sensory and moisture content calculated by onion powder. The onion powder storage life is nearly 90 days.
