Abstract
Fruit juice processing is a critical component of the food and beverage industry, offering a means to extend the shelf life of fruits and provide consumers with convenient, nutrient-rich beverages. This paper reviews traditional and modern methods of fruit juice processing, key challenges, and recent technological advances aimed at improving efficiency, quality, and safety. Emphasis is placed on extraction, pasteurization, and preservation techniques, as well as innovations in non-thermal processing.
