Changes in proximate parameters of mango (Mangifera indica L.) Cv. Alphonso seed kernel powder cookies during storage at ambient conditions
Abstract
Increasing incidences of combined drought stress poses a serious threat to production and productivity the experiment was conducted in Factorial Completely Randomized Design (FCRD), with six major treatments and four sub treatments at ambient storage conditions. At 0, 10, 20 and 30 days in the storage, observations were conducted regarding changes chemical parameters of mango kernel powder cookies. From the present investigation, it was observed that all the chemical parameters such as ash, reducing sugars, total sugars, protein, fat, crude fiber, carbohydrates and starch contents exhibited a decreasing trend while increasing trend was observed in moisture content of the mango kernel powder cookies during 30 days of storage period.
