Chemical evaluation of whey based fruit juice beverage and its shelf-life

Abstract

Whey beverages are a type of drink made from whey, a by-product of cheese production. To make a whey beverage, you would typically blend or mix some ingredients (i.e. Fruit juices/pulps etc.) together until well combined. The result is a tasty and nutritious drink that combines the natural flavours of fruit juice with the protein benefits of whey, making it a popular choice for those looking to incorporate protein into their diet while enjoying a fruity refreshment. The Whey based Fruit juice Beverage was made by using the Panir whey with two types of fruit juices (Pomegranate fruit juice and Kinnow fruit juice), Four levels of fruit juices (20 per cent, 25 per cent, 30 per cent and 35 per cent) and Four levels of sugar (8 per cent, 10 per cent, 12 per cent and 14 per cent). The made samples were stored at refrigerated temperature (5±1 °C) for 0, 5, 10, 15 and 20 days on Whey based Fruit juice Beverage with respect to, Chemical evaluation (Moisture, Fat, Protein, Total sugar (total carbohydrate) and Ash per cent). The fresh and stored samples were analyzed for their chemical qualities.
