Review on extraction of fennel seed essential oil and incorporation into vodka

Abstract

This review explores the properties, uses, and extraction methods of fennel seed (Foeniculum vulgare) and vodka.Fennel, an aromatic herb from the apiaceae family, is cultivated for its culinary and medicinal benefits.Key variants include sweet fennel (F.vulgare subsp.vulgare var.dulce) and bitter fennel (F.vulgare mill.var.vulgare subsp.vulgare).Fennel seeds are rich in Essential oils (1-4%), with fenchone and trans-anethole being primary components, and contain significant nutrients such as protein, fiber, and minerals.Vodka, originating from Poland and Russia, is produced globally using neutral spirits.The ideal ethanol concentration for vodka is 40% v/v, enhancing its molecular structure.Both pure and flavored vodkas are discussed, along with analytical methods like mass spectrometry and chromatography.The Soxhlet extraction method for Essential oils, particularly fennel seed oil, is highlighted for its efficiency.Acetone is found to be the most effective solvent.This review underscores fennel's traditional and modern applications, emphasizing its health benefits and the sophisticated production techniques of vodka.
