Abstract

Certain anti-nutritional factors (ANFs) interact with proteins and form insoluble complexes hence, decreases bioavailability of proteins. Twenty four different hybrid varieties of pigeon pea [Cajanus cajan (L.) Millsp.] were analysed for reduction in ANFs on different soaking treatments.
