Estimation of production cost of Kheer Mohan prepared from cow milk
Abstract
Traditional dairy products offer significant potential for commercial expansion, contributing to rural economic development, preserving cultural food practices, and catering to a growing market for indigenous, nutritious delicacies. This study presents a detailed cost analysis of Kheer Mohan, a chhana-based sweet delicacy primarily popular in the eastern regions of Rajasthan. The product, made using cow milk, represents a rich culinary tradition that holds promise for scalable commercialization. The analysis focuses on evaluating the feasibility of producing Kheer Mohan at a commercial scale by estimating its unit production cost and potential profitability. The sweet is prepared using chhana (milk solids), sugar syrup, arrowroot powder and Suji. Cost assessment was conducted considering inputs such as raw materials, fuel, labor, packaging, and other overheads under hygienic production standards. The estimated cost of producing 1 kg of Kheer Mohan from cow milk is ₹171.55. This includes the expenditure on milk, coagulants, utilities, and labor. With the existing market price of ₹240 per kg, the product yields a gross profit margin of approximately ₹68.45 per kg. This margin indicates substantial scope for income generation, especially for small and micro dairy entrepreneurs. Precise cost estimation plays a key role in ensuring profitability, price competitiveness, and consistent product quality. The study underscores the need for standardized processing methods and sound financial planning to successfully commercialize traditional sweets like Kheer Mohan. These insights can guide small-scale processors in enhancing rural livelihoods while safeguarding the rich heritage of regional dairy products.
