Abstract

The black spot formation in Litopenaeus vannamei kept in chilled storage (2 °C) was examined for 14 days. The crustacean enzyme polyphenol oxidase (PPO) was partially purified through 70% ammonium sulfate precipitation, followed by dialysis.
