Standardisation of nutrimix to support bone and hormonal health in menopausal women

Abstract

Menopausal women experience increased nutritional requirements due to hormonal changes, yet their dietary needs are often overlooked, leading to various health complications affecting bone health such as osteoporosis. Other complications include cardiovascular issues, and hormonal imbalances. In response to these challenges, a nutrimix powder was developed using ingredients rich in nutrients and bioactive compounds beneficial for menopausal women, including jackfruit seed flour, soy flour, chia seed flour, quinoa seed flour, and almond flour. Six treatment combinations were prepared and evaluated through sensory analysis using a 9-point hedonic scale with 20 trained panelists. Nutrimix prepared with 30% jackfruit seed flour, 20% defatted soy flour and 50% other ingredients was most acceptable in sensory evaluation. The selected nutrimix formulation was further analysed for its physicochemical properties over a four month storage period, after which the best performing treatment was identified and utilised to develop value-added products such as porridge for enhanced nutritional benefits. The composition analysis showed that the product is a good source of protein (18.46), fibre (11.12), calcium (302.52), phosphorus (191.25), zinc (5.97) and iron (13.82). The phytoestrogen content of the nutrimix was also analysed, highlighting its potential role in alleviating menopausal symptoms and bone health. Based on its nutritional profile and sensory acceptability, the developed nutrimix powder was found to be suitable and nutritionally adequate for menopausal women.
