Studies on physico chemical properties of barnyard millet (Echinochloa esculenta) kheer
Abstract
The research work entitled “studies on preparation of Barnyard millet (Echinochloa esculenta) kheer” was undertaken during the year 2022-2023 at Department of Animal Husbandry and Dairy science, College of agriculture, Vasantrao Naik Marathwada Krishi Vidyapeeth Parbhani, Maharashtra With the aim to standardize process of preparation of Barnyard millet kheer, having suitable treatment combinations. After preliminary trials 4 levels viz. 1.5, 2.5, 3.5 and 4.5 per cent i.e. T1, T2, T3, and T4 respectively were selected to add Barnyard millet. Four levels were compared to control and a result obtained was statistically analyzed to arrive at suitable conclusion. From the results it was observed that addition of Barnyard millet in kheer decreased in moisture (59.98 to 56.11 per cent), increased in protein (6.93 to 7.52 per cent), as well as fat (9.78 to 9.97 per cent) and increased in ash (1.27 to 3.83 per cent) total carbohydrate (22.04 to 22.57 per cent) and total solid (40.02 to 43.89 per cent).
