Abstract

Mushrooms have long been recognized as vital nutritional and medicinal resources, with Pleurotus florida emerging as one of the most widely cultivated and consumed species. Known for its impressive range of bioactive compounds, P. florida is a powerhouse of nutraceutical benefits, including antioxidant, anti-inflammatory, antimicrobial, and immune-enhancing properties. These benefits are attributed to the presence of key bioactive compounds, such as beta-glucans, phenolics, flavonoids, ergothioneine, terpenoids, and lovastatin. However, the extent of these benefits relies heavily on the bioavailability of these compounds-their absorption, metabolism, and utilization within the human body. This article delves into the bioavailability of nutraceutical compounds in fresh and dehydrated P. florida, exploring the effects of processing methods, physiological factors, and dietary interactionss.
